Flat noodles with Vegetable balls in ginger sauce- Part 1

This is a two part series where the first part is dedicated to the flat noodles recipe and the second part is dedicated to the Vegetable Balls in ginger sauce. Flat noodles are noodles, well, that are flat. They taste pretty different from the usual noodles; they have a different texture. Cooking them is pretty much using the same technique.


PART 1

FLAT NOODLES:

You will need:
1.One packet flat noodles.
2. Cabbage, carrot, capsicum, onions and beans- Together 2 cups (Should be chopped length wise)
3. Soya sauce- 1 tsp
4. Tomato sauce- 1 tsp
5. Green chilli sauce- half tsp
6. Oil
7. Salt to taste
Spring onions for garnish.

Method:

1. In a vessel, add 7-8 cups water. Add a pinch of salt and a tsp of oil.
2. The water should boil vigorously. Add the noodles and let it boil for 3-4 minutes or till 3/4th done.
3.Strain it and set aside.
4. In a wok, add a tsp of oil. Add all the vegetables together and fry on a high flame for 2 minutes.
5. Reduce the heat and add all the sauces one by one.
6. Add salt to taste and stir. A pinch of sugar can be added to balance the flavours.
7.Finally, the noodles should be added and mixed together. Let it remain on a reduced flame for a minute.
8. Empty into serving dish and garnish with spring onions.
